Chef Anna Petrillo, from the restaurant Es Foraster in Palma, has won first prize in the fourth edition of the gastronomic contest held on Saturday, 13 September 2025, at the Son Mesquidassa olive mill.
The winning pa amb oli, both surprising and innovative, combined black garlic and olive mousse, confit cherry tomatoes, grilled squid stuffed with spring onions and sobrassada, smoked mozzarella, and aubergine, all finished with a kimchi sauce. A bold creation that captivated the jury thanks to its balance between tradition and modernity.
The jury for this edition was made up of Tomeu Penya (singer-songwriter and lover of good pa amb oli), David Maties (winner of the 3rd edition), Joan Ramis (olive oil master), Juan Alcaide (master olive miller at Son Mesquidassa), and Ángel Aguiló (communicator).
The competition brought together fifteen finalists from different parts of Mallorca. Jaume March, from Pollença, achieved second place, while Vicky Pou Ramírez, from Sóller, completed the podium in third place. In addition, the young Bernat Bonet received the special recognition of Future Master of Pa amb Oli for participants under 16 years old.
The event, organised by Olives Rosselló, Son Mesquidassa, and Oli Balle, aims to highlight the Mediterranean diet and showcase the richness of local products.
